Baby-Led Weaning Recipe: Simple Scotch Pancakes

Makes: Approx. 10 pancakes

Pancakes are a brilliant staple during weaning. They’re naturally soft, easy to hold, and incredibly versatile, working just as well with savoury toppings as sweet. They’re also perfect for batch cooking and freezing, making them a handy go-to for busy families.

Even better, pancakes are a great opportunity to introduce babies to a wide range of flavours. Babies don’t yet have fixed ideas about which foods “go together”, so pairing familiar foods with new or unexpected flavours can help widen their palate and support adventurous eating later on.

Ingredients

  • 1 cup (125g) self-raising flour
  • 1 medium egg
  • 150ml full-fat milk (Any milk works — cow’s, soya, oat, coconut, breast milk or formula)

Method

  1. Add the flour to a large bowl and make a well in the centre.
  2. Crack the egg into the well.
  3. Slowly add the milk, whisking continuously until you have a smooth, thick batter with no lumps.
  4. Heat a small amount of oil in a frying pan over medium heat.
  5. Add around 2 tablespoons of batter per pancake. Cook for approximately 2 minutes on each side until golden and cooked through.
  6. Allow to cool before serving.

Storage & Batch Cooking

Fridge: Store for up to 2 days in an airtight container.

Freezer: Freeze with baking paper between pancakes for up to 3 months.

To Serve: Defrost overnight in the fridge or gently reheat until piping hot, then allow to cool.
