These Healthy Banana Oat Mini Muffins are a quick and easy breakfast or snack recipe the whole family will love. Made with ripe bananas, oats, and a touch of maple syrup, they’re naturally sweetened and packed with fibre — perfect for toddlers, kids, and adults alike.

Whether you’re meal-prepping for the week or looking for a healthy grab-and-go option, this simple banana oat muffin recipe is nourishing, and can be customised with your favourite toppings like fruit, granola, or chocolate chips.

Ingredients

  • 2 medium eggs, whisked
  • 1 teaspoon vanilla bean paste or extract
  • 2 bananas, mashed
  • 1 tablespoon maple syrup or fruit puree
  • 2 ½ cups (225g) oats
  • 1 tablespoon ground cinnamon
  • 1 ½ teaspoons baking powder
  • 1 ½ cups (375ml) full-fat milk (any will work - cow’s, soya, oat, coconut, breast or formula)
  • Toppings of your choice: chopped fruit, granola or chocolate chips

Method

  1. Preheat the oven to 180℃ and grease or line two 12-hole mini muffin trays.
  2. In a large bowl, mix together the eggs, vanilla, bananas and maple syrup.
  3. In a smaller bowl, mix together the oats, cinnamon and baking powder — then combine with the banana mixture before stirring in your choice of milk.
  4. Divide the mixture evenly between the mini muffin cases.
  5. Once the trays are filled, top your uncooked bakes with your choice of toppings.
  6. Bake in the oven for 35 minutes or until golden brown, and a knife comes out clean from the centre to show that they are cooked through.
  7. Serve once cooled.
